
Avocado Lime Dressing
Ingredients
- 2 ripe avocado (ripe)
- 2 lime (juiced (about 1/4 cup))
- 1/4 cup extra virgin olive oil (cold-pressed)
- 1/2 cup cilantro (fresh, leaves and tender stems)
- 1 clove garlic
- to taste sea salt
- 1 tbsp apple cider vinegar (raw, unfiltered)
- 2 tbsp full-fat coconut milk (for desired consistency)
- 2 green onions (roughly chopped)
Instructions

Cut avocados in half, remove the pits, and scoop the flesh into a blender or food processor.

Add lime juice, olive oil, cilantro, garlic, apple cider vinegar, green onions, and a pinch of sea salt.

Blend until smooth and creamy, stopping to scrape down the sides as needed.

With the blender running, slowly add coconut milk until the dressing reaches your desired consistency. For a thinner dressing, add more coconut milk one tablespoon at a time.

Taste and adjust seasoning, adding more salt or lime juice if needed.

Transfer to a glass jar or container with a tight-fitting lid.

Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Optional: Add a pinch of garlic powder or a small jalapeƱo (seeds removed) for extra flavor.
